An English doctor wrote down how to make wine sparkle six years before Dom Pérignon got to Champagne.
Friday, Dec 18 to Sunday, Dec 20 · 12 to 5 PM · 77 Stage Road, Leavenworth, WA
On December 17, 1662, an English doctor named Christopher Merret read a paper to the Royal Society in London. It explained how adding sugar to wine makes it sparkle. It's the oldest written recipe for sparkling wine anyone has found.
Dom Pérignon, the monk who usually gets the credit, didn't arrive at his abbey in Champagne until 1668. The English also had stronger glass bottles, and a bottle of bubbles needs all the strength it can get.
Our Brut Rosé is 90% Pinot Noir and 10% Chardonnay. For the pink, Gary adds a splash of still Pinot Noir.
What's pouring
Silvara Brut Rosé. Pineapple, orange and pink grapefruit on the nose, with a little cinnamon, vanilla and clove. Creamy when you sip, with a long, round finish.
How it works
- A $5 pour of our Brut Rosé, one per person
- Take a bottle home and your $5 comes off the price
- Want more? The full tasting lineup is pouring all weekend
- Grab a seat by the fireplace inside or a fire pit outside
Something to tell your friends
Dom Pérignon is famous for saying, "Come quickly, I am tasting the stars!" He probably never said it. The line first showed up in an advertisement, long after he died.
